Traditionally Sambal Oelek comes from Indonesia and is made by rubbing red pepper in a mortar (oelek = ‘rub’). The most common type of pepper for the industrial preparation of sambal is the cayenne pepper. These narrow, pointed fruit color from green to deep red.

Harvested red peppers have a spicy flavor and are deliciously hot. The name Cayenne was named after the Cayenne river in French Guiana, where locals grow this old pepper race from generation to generation.

The relatively mild flavor, makes this sambal ideally suited for, among others, soups, sauces, snacks and dishes more spicy. Sambal oelek is prepared by cayenne peppers which are finely ground to a purée immediately after harvesting. To ensure a long shelf life salt, citric acid and potassium sorbate are added.
